1 tbsp Ground garlic
1/2 tbsp Cayenne pepper
1 tbsp Taco seasoning
1 tbsp Paprika
Salt & pepper
Put prawns, ground garlic, cayenne pepper, taco seasoning, paprika, olive oil, salt and pepper in a bowl to marinate in the fridge.
For the pineapple salsa – dice up capsicum, tomato, red onion, pineapple, jalapeno and coriander. Combine everything in a bowl and mix in lime juice, chilli flakes, salt & pepper. Set aside, let the flavours blend in the fridge.
Heat a pan to high and add the marinated prawns. Cook for 3-4 minutes per side until prawn is cooked.
Warm the tortillas in a pan until nice and charred on both sides. Set aside.
Start assembling the tacos. Add prawns and top with pineapple salsa, garnish with parsley and serve.
