Chilli Tomato Mussels

There is nothing better than sharing a family recipe that everyone should try. This recipe from start to finish takes only 15 minutes – hard to believe but true. Use Australian Black Mussels for the plump, unsurpassed flavour. Who wouldn’t want a bowel of delicious and satisfying mussels that will be a family favourite on the dinner table.

Ingredients

½ tsp dried Chilli Flakes

1tsp Olive Oil

½ Onion finely chopped

½ tin chopped Tomatoes

1 Garlic Clove finely chopped

Pepper

1 tsp Parsley chopped

500g Black Mussels, cleaned and beards removed

3 tbsp dry white wine

Crusty bread to serve – optional

 

 

 

Method

Step 1

Heat the oil in a frying pan, adding onion and garlic. Fry until translucent.

Step 2

Add chilli, tomatoes and pepper and stir.

Step 3

Turn the heat up to high and add the mussels and wine. Cover with a lid. 
Stir the mussels after 2-3 mins with the sauce and put the lid back on.

Step 4


Once the mussels are all fully open, stir in the chopped parsley.


Serve in a big bowl with some crusty bread.
