BBQ King Prawn

Looking for a quick and easy, yet delicious dish to change up your weeknight dinners? Something that feels like you are eating at a restaurant but you get to enjoy in the comfort of your own home? The wholesome Mediterranean ingredients of these BBQ king prawns marry together to form a melt in your mouth dish and will become your new favourite home cooked meal!

Ingredients

1kg Jumbo Skull Island Prawns Green, butterflied and washed


Marinade

3 tsp Olive Oil

1 lemon, juice squeezed

1 tsp lemon rind

4 garlic cloves, minced

25g garlic butter (or unsalted butter) softened to room temperature

1 tbsp parmesan cheese, finely grated

1 handful parsley, chopped

1 tsp chilli flakes (optional)

Salt and pepper

 

To serve

1 tbsp parsley leaves to garnish

2 lemons cut into quarters

1 lime cut into quarters

Warm crusty sourdough bread topped with olive oil and dukkah

Method

Step 1

Wash the prawns with cold water

Step 2

Place all the marinade ingredients into a food processor and process until just combined but not over processed.

Step 3

Place the prawns into a large bowl and pour in 3⁄4 of the marinade, making sure all the prawns are covered. Then refrigerate for 30 minutes.

Step 4

Heat up the BBQ to full temperature, then lower to medium and place the prawns on the BBQ shell side down until cooked. There is no need to flip the prawns (5-8 minutes).

Step 5

Baste with the remaining marinade to your liking while the prawns are cooking.

Step 6

Remove the prawns and squeeze over a little more lemon, salt and pepper. Garnish with parsley leaves.

Step 7

Serve with crusty warm bread.
