How to Make a Healthy and Tasty Omelette?

An easy, and quick dinner idea. Deliciously creamy crab meat and mouth watering asian herbs and spices wrapped in a fluffy egg mixture. Dinner (or any other meal) made healthy and easy. INGREDIENTS

 

Crab mixture

  • 500g cooked crab meat
  • 3 shallots chopped finely
  • ½ tsp chilli paste
  • 1 fresh chilli finely chopped
  • ½ tsp ginger paste
  • 1 tsp soy sauce
  • 1/2 tsp sesame oil

 

Omelette

  • 6 eggs, lightly beaten
  • 1 tsp sesame oil
  • 1 tbsp soy sauce

 

Garnish

  • 3 shallots finely chopped
  • ½ cup bean sprouts
  • ¼ cup coriander leaves, roughly chopped
  • 2 medium fresh chillis finely chopped
  • Salt and pepper to season

METHOD

 

Step 1

Finely slice chilli and shallots and stir in a bowl with the crab meat, chilli, chilli paste, ginger paste, 1 tsp soy sauce and 1/2 tsp sesame oil. Set aside.

Step 2

Lightly beat the eggs and stir through soy sauce and sesame oil.

Step 3

Place a medium non-stick pan on low to medium heat, once the pan is heated add the egg mixture and distribute around the pan.  Once the egg begins to cook gently move the uncooked areas around the pan so they can cook.

Step 4

Once the egg is cooked, no runny liquid visible, remove from the pan and place on a plate.

Step 5

Scatter the crab mixture onto one half of the egg and add ⅓ of the additional shallots, chillies and bean sprouts.  Gently fold the egg over the crab mixture and garnish with remaining shallots, chillies and bean sprouts.  Salt and pepper to season and drizzle a few drops of soy and sesame oil.

Step 6

Serve with steamed green beans and broccolini.
