Saute the onions and garlic in the olive oil on medium to low heat. Add the carrot and cook until softened.
Add the canned tomatoes, cherry tomatoes and vegetable stock and spices. Combine well and simmer on low heat for 5 minutes or until the sauce begins to thicken.
Add the chickpeas and simmer, then add the prawns and simmer for another 5 minutes or until cooked through.
Squeeze in the lemon and season with salt and pepper
Serve sprinkled with fresh chopped mint and parsley, and a slice of sourdough!
