How to Make a Warming Chickpea and Prawn Stew?

One of the best ways to warm up during winter is this Chickpea and prawn stew. This tasty recipe is healthy and perfect enjoyed with the whole family. It’s warm and hearty, and also great to make ahead for work, or to have ready in the fridge. Try it with a slice of bread to mop up the stew off your plate.   • 2 tbsp olive oil
  • 1 can peeled tomatoes
  • 1 can chickpeas, drained and washed
  • 6 cherry tomatoes
  • 1 large carrot, sliced
  • 1 onion, finely diced
  • 2 cups vegetable stock
  • 1kg peeled king prawns
  • 1 fresh chilli, chopped
  • 2 garlic cloves, finely chopped
  • 1½ tsp paprika
  • 1 ½ tsp ground cumin
  • 2 tbsp fresh mint, to serve
  • 2 tbsp fresh parsley, to serve
  • 1 lemon
  • Salt & pepper to serve


Step 1

Saute the onions and garlic in the olive oil on medium to low heat. Add the carrot and cook until softened.

Step 2

Add the canned tomatoes, cherry tomatoes and vegetable stock and spices. Combine well and simmer on low heat for 5 minutes or until the sauce begins to thicken.

Step 3

Add the chickpeas and simmer, then add the prawns and simmer for another 5 minutes or until cooked through.

Step 4

Squeeze in the lemon and season with salt and pepper

Step 5

Serve sprinkled with fresh chopped mint and parsley, and a slice of sourdough!
