Learn how to create this Mediterranean inspired Sardine dish, oven baked to perfection. This dish will turn anyone into a Sardine lover with it’s bold, full flavours. 2 cups White Rice
250ml Chicken Stock
1kg Australian Sardines
1 tbsp Garlic Paste
2 tbsp Tomato Paste
1 tsp Cumin
250g Cherry Tomatoes
1 Red Capsicum, diced
1 Green Capsicum, diced
1 Red Onion, diced
2 Garlic Cloves, sliced
½ cup Parsley, roughly chopped
Salt & Pepper to season
Combine the rice, chicken stock, garlic paste, tomato paste and cumin and cook in a rice cooker.
Fry the red onion for 3 mins on a medium heat. Add the capsicum and fry for a further 2 mins.
Combine with the cooked rice. Line the bottom of a baking dish. Place the sardines on top. Spread cherry tomatoes and sliced garlic on top of the sardines.
Add a generous drizzle of olive oil, season with sea salt and pepper.
Bake for 20 mins at 180 degrees
Drizzle with lemon juice and dress with chopped parsley to serve
