Preheat the oven to 175° C
In a medium bowl, combine pesto with bread crumbs and parmesan and mix well.
Pat down salmon fillets with a paper towel, then spread the pesto mixture evenly across the top of the salmon. Sprinkle with additional bread crumbs if desired.
Combine lemon juice, garlic, olive oil and salt in a small bowl. Mix to combine.
Place salmon in oven pan. Cook for ten minutes then add kale. Drizzle lemon mixture over kale. Return to oven for additional ten minutes or until cooked through, stirring kale occasionally.
Make couscous according to box instructions.
Serve salmon with kale and couscous. Garnish with parsley.
