Spice up your mid-week meal with this Coconut Fish Curry

Warm yourself this winter with this delicious thai style one pot coconut fish curry. It’s packed with spices, full of satisfying flavours and is just what you need to warm you up on these cold, damp days.

INGREDIENTS

Curry Paste

  • 4 Garlic Cloves, crushed
  • Ginger, chopped
  • 1 onion, chopped
  • 1 tbsp turmeric
  • 2 tsp of cumin, grounded
  • 1 tbsp curry powder
  • 1/2 cup of Coriander, chopped
  • 1 tsp of salt

Liquid

  • 400ml coconut milk
  • 1 cup of chicken stock

Fish & Vegetable

METHOD


Step 1

Put all curry paste ingredients in a food processor and gradually add water. Mix until paste form.

Step 2

Heat oil in a hot pan or wok over medium heat. Add in curry paste and cook until fragrant.

Step 3

Pour in coconut milk and stock, simmer for 10 minutes. Reduce heat to low, add in fish fillets, capsicum, broad beans & broccoli, let it cook in the sauce for 8 minutes or until fish is cooked.

Step 4

Season with salt and pepper as required, serve with steamed rice. Enjoy!
