A classic winter dish, this one-pan beef mince cottage pie is filling, family-friendly, and full of rich, savoury flavour. Topped with fluffy mash and melted cheese, it’s a midweek go-to.
500g premium beef mince
1 onion, diced
1 garlic clove, minced
1 carrot, diced
1 cup frozen peas
2 tbsp tomato paste
1 cup beef stock
1 tsp Worcestershire sauce
3 cups mashed potatoes
1/2 cup grated cheese
Sauté onion, garlic, and carrot. Add mince and cook until browned.
Stir in tomato paste, Worcestershire, stock. Simmer 10 mins.
Stir through peas. Transfer to ovenproof dish.
Top with mashed potato and grated cheese.
Bake at 180°C for 20–25 mins until golden and bubbling.
Tip: For a lighter version, use sweet potato mash or cauliflower mash.
