Homemade Buttery Lobster Rolls

  • 1kg cooked Lobster meat (Tasmanian Scallops with roe or Canadian Scallops without roe)
  • 2 Tablespoons fresh lemon juice
  • 1/4 cup chopped celery
  • 1/4 cup chopped spring onion
  • 4 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • Salt & pepper to taste
  • 4 hot dog buns


Step 1

Melt 1 tablespoon of butter and garlic in a large nonstick pan over medium heat. Add the buns and toast, turning, until golden on both sides, about 3 minutes. Remove to a plate.

Step 2

In a small bowl, combine the cooked lobster, lemon juice, celery, spring onion, salt and a few grinds of fresh black pepper, tossing until well combined. Set aside.

Step 3

Divide the lobster mixture into the toasted buns and serve immediately.
