4 x 180g salmon fillets
2 tbsp olive oil
3 cloves garlic, minced
1 tbsp chopped fresh dill (or 1 tsp dried)
1 tbsp chopped fresh parsley
1 tsp thyme leaves
Juice of 1 lemon
1 tsp lemon zest
1 small red onion, thinly sliced
1–2 tomatoes, sliced
1 lemon, thinly sliced
Salt and pepper to taste
Preheat oven: Set oven to 200°C (400°F). Line a baking tray with baking paper or lightly oil it.
Prepare herb mixture: In a small bowl, mix olive oil, minced garlic, dill, parsley, thyme, lemon juice, and lemon zest.
Assemble: Place salmon fillets on the tray. Season with salt and pepper. Brush each fillet generously with the herb mixture.
Add vegetables: Arrange the red onion slices, tomato slices, and lemon slices around and slightly over the salmon fillets.
Bake: Bake for 12–15 minutes, or until salmon flakes easily with a fork and vegetables are tender.
Serve: Spoon some of the pan juices over the top and serve immediately, garnished with extra herbs if desired.
