INGREDIENTS

 

  • 1kg Australian Pipis
  • 1/2 kg Pork Ribs
  • 4 Garlic Cloves, peeled and cut in half
  • Coriander (don’t chop add whole)
  • 250ml dry White Wine
  • Olive Oil
  • Salt & Pepper
  • Chilli
  • Crusty bread – Optional

METHOD

 

Step 1

Heat pan adding oil then a little garlic.

Step 2

Add in the pork ribs and cook till browned. Place in bowl and set aside.

Step 3

Add remaining garlic & coriander for few seconds. Add wine, salt and pepper and a little chilli.

Step 4

Let the wine cook out a little.

Step 5

Bring Pippi’s to boil and cover with lid.

Step 6

Half way toss Pippi’s and add pork back to pan. Cook until all Pippi’s have opened.

Serve with crusty bread.
