Leather Jacket Fish has a beautiful white flesh with a similar texture to a firm crab meat. Best to lightly season, flour and cook the fish in butter. Leather Jackets are an old family favourite and a very underestimated flavoursome fish. Some may know these as “butter fish” based on the common way of cooking them. Best left whole for baking and grilling. Available all year round
